Not only fish

On the coast of the Biosphere Reserve of the Anaga Massif, that marine strip that includes the area between the mouth of Barranco de Tahodio (in Santa Cruz de Tenerife) surrounding the entire coast of the Anaga Peninsula to the mouth of Barranco de Agua de Dios (in La Laguna). Within the reserve there are two marine areas of special protection, both located in the southern part of the municipality of Santa Cruz de Tenerife: Sebadal de San Andrés and Sebadal de Antequera. The sebadales are habitats where many species of fish and other groups of marine animals come to spawn, guaranteeing the repopulation of the coasts. There are many species that are in the area either passing through or because it is their natural habitat and it should be a priority to conserve this natural habitat.

Some of the species that inhabit the coasts of Tenerife are fish such as bream, groupers pejeverdes, barrigudas … There are also echinoderms such as the sea urchin cachero, the common or star. Mollusks such as white limpets, black limpets and burgids. Likewise, in the intertidal pools you can observe young octopuses or red or dusky crabs. Also in transient species such as loggerhead turtles and bottlenose dolphins. In short, a great variety of species that contribute to the richness of the marine ecosystem of the Canary Islands.

This recipe is not composed of fish, but of sea product: the squid is fished at night because it lives at a depth of about 800 meters and only at night it usually goes to shallow areas.

This is a typical recipe in the Canary Islands: the delicious potas en salsa! Besides being tasty, it is easy to prepare.

Ingredients: 1 kilo of potas, 2 white onions, 1 red bell pepper, 3 cloves of garlic, 4 medium-sized crushed tomatoes, coriander, white wine, bay leaf, cumin, salt and paprika (if you want it spicy or not).

To prepare them, we will first make a paste with the parsley, salt and garlic and we will pass it to a pot to brown it, add the onion and the chopped bell pepper, when it gets color, add the tomato and let it fry together with the above. Add a splash of white wine and wait for the alcohol to evaporate while cooking. At this point add the chopped potato and cumin along with the bay leaf and ground bell pepper. Then all that remains is to close the pot (it is more convenient if you cook in a pressure cooker). Potatoes in sauce are ideal to eat with Canary Island Potatoes, either stewed or wrinkled, a delicacy not to be missed.
